Frits Takken from The Buckland Brewers shares this great recipe for a German Pilsner.
“There are so many excellent hops now available to us.” he writes, “my beers are more malty than hoppy but I like the German lager hops like Perle and Saaz.”
This is for a 23L batch in the fermenter.
Mash 17L
Sparge 16L.
Expected OG 1.050
FG 1.010.
Boil time 90 mins.
Grain bill
4 KG Lager malt
0.25KG Carapils (Head retention)
Boil additions
60 mins 20gr Perle
30 mins 10gr Perle
15 mins 1 protofloc tablet (Irish seaweed used as a clearing agent)
15 mins 10gr Perle
5 mins 10gr Perle
(This uses Perle at 8.4% AA. If your Perle is different use an online AA converter.
Mash 60 mins @ 66 C.
Mash out 10 mins @ 75 C.
Now for the interesting bit. For a long time I could not afford a temp controlled fermenter – I ferment all my beers at room temp.
Yeast
Mangrove Jack California Lager Yeast M54. This works at ale temp.
