I have been dying to try this yeast out, it’s called Banana Split from WHC Labs. It’s a Hefeweissen strain that produces high amounts of isoamyl acetate, producing this top banana flavour. It ferments at 18-24oc so it’s an easy one to dial in. The golden ale is made with a mixture of barley and wheat for a full body to support those banana flavours. Bananarama? Hopefully it’s not a cruel summer when you are enjoying this one.
